Transform Rice into Delicious Rice Pudding

Rice pudding is a delicious and comforting dessert made by slowly simmering rice in milk until creamy and rich. While traditional recipes start with uncooked rice, you can also use leftover cooked rice to make this sweet treat.

Using cooked rice cuts down the cooking time while still resulting in a smooth, creamy pudding. In this post, we’ll share tips for making tasty rice pudding using cooked rice.

Cooking Rice for the Pudding

The first step is cooking rice that will be used to make the pudding. Here are some tips:

  • Make sure the rice is fully cooked and tender before using it for the pudding. Undercooked grains will result in a gritty texture.
  • Plain white rice works best. Stay away from flavoured or fried varieties. 
  • Using a rice cooker allows effortless cooking with perfect grains every time. 
  • Cook at a 1:2 rice to water ratio for soft, moist rice for the pudding.
  • Spread cooked rice on a tray to cool quickly before using in the pudding.

How to Make Rice Pudding with Cooked Rice

Once you have cooled, cooked rice, making rice pudding is easy:


  • 3 cups cooked rice
  • 4 cups milk
  • 1/3 cup sugar
  • 1 tsp vanilla extract 
  • 1/4 tsp cinnamon 
  • Pinch of salt
  • Raisin, sliced almonds and pistachios for garnish
  • A few strands of saffron (optional)


  • Combine the cooked rice, milk, sugar, vanilla and cinnamon in a pot. 
  • Cook on medium heat, stirring frequently until it thickens, about 15-20 minutes.
  • Once the pudding has a creamy consistency, remove from the heat.
  • Add Saffron (optional)
  • Allow it to cool slightly before transferring to a serving dish.
  • Garnish with raisins, almonds and pistachios.
  • Chill in the refrigerator for 2-3 hours before serving.

Tips for the Perfect Pudding Texture:

  • Stir the pudding constantly as it cooks to prevent scorching on the bottom. 
  • Cook on low heat and add more milk if it gets too thick too quickly.
  • The pudding will thicken more as it cools. Remove from heat when it’s a bit loose.
  • Avoid overcooking or the rice will become mushy.
  • Let it chill properly in the fridge to allow flavours to mingle.


Whipping up rice pudding with leftover rice is an easy way to use up leftovers and make dessert in minutes. Cooked rice shortens the cooking time while still absorbing the flavors of milk, sugar and spices.
